We eat meat about once or twice a month only, and one of our reasons was the amount of chemicals that the &lt;a href="http://motherjones.com/tom-philpott/2012/01/supermarket-meat-comes-sick-animals"&gt;animals are dosed up&lt;/a&gt; with.  Other reasons are the &lt;a href="http://www.truthdig.com/report/item/why_you_should_eat_yak_instead_of_beef_20110927/"&gt;environmental impacts&lt;/a&gt; that large scale cattle raising has and further the adverse &lt;a href="http://evolvingwellness.com/posts/663/15-reasons-why-you-may-want-to-reconsider-eating-meat/"&gt;health effects&lt;/a&gt; of eating a diet rich in meat. &lt;/p&gt;

Much like the Japanese American invention of the California roll, we decided to mix some of our local cuisine with the cuisine of our heritage. &lt;/p&gt;
&lt;p&gt;Japanese people that came to California thought that the avocado was similar to fatty tuna. Well, we though the nopales, when cut and pickled, had the texture that was similar to &lt;a href="http://www.law.tohoku.ac.jp/~hatsuru/hop/images/HugeHam2011m.jpg"&gt;mekabu&lt;/a&gt; a type of seaweed/kelp. &lt;/p&gt;
&lt;p&gt;Anyway, this is a delicious little dish that’s super easy to make and every can add as a little side dish.&lt;/p&gt;
&lt;p&gt;Ingredients&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 pads of nopales/cactus diced &lt;/li&gt;
&lt;li&gt;half a medium sized lemon juiced&lt;/li&gt;
&lt;li&gt;half a lime juiced&lt;/li&gt;
&lt;li&gt;1tbsp of rice vinegar&lt;/li&gt;
&lt;li&gt;sprinkle of salt&lt;/li&gt;
&lt;li&gt;1tsp - 2tsp of soy sauce&lt;/li&gt;
&lt;li&gt;half a small onion sliced&lt;/li&gt;
&lt;li&gt;1 green onion chopped finely&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;Mix all the items in a bowl and store away in a tupperware (hopefully your tupperware is not as beat up as ours…). &lt;p&gt;People have different names for this yummy treat around the world, but it all means delicious in our language of food! Needing a quick snack that both the baby and I can eat, I put a twist on everyone’s favorite snack.&lt;/p&gt;
&lt;p&gt;It’s a combination of Japanese flavors with a popular European dipping sauce for frites.&lt;/p&gt;
&lt;p&gt;Fries topped with &lt;/p&gt;
&lt;ul&gt;&lt;li&gt;extra virgin Lebanese olive oil&lt;/li&gt;
&lt;li&gt;chopped Korean seaweed &lt;/li&gt;
&lt;li&gt;aonori (sea weed flakes)&lt;/li&gt;
&lt;li&gt;bonito flakes &lt;/li&gt;
&lt;li&gt;sprinkle of crushed black pepper&lt;/li&gt;
&lt;li&gt;sprinkle of pink salt&lt;/li&gt;

&lt;p&gt;Hungry, all of us Matsumotos walked into the kitchen to get some energy from some whole grain goodness.&lt;/p&gt;
&lt;p&gt;The waffles are made with the combination of oat flour, brown rice flour and whole wheat flour. A vegan delight in the morning, with a spicy touch to it.&lt;/p&gt;

&lt;p&gt;&lt;em&gt;Ingredients&lt;/em&gt;&lt;/p&gt;

&lt;ul&gt;&lt;li&gt;1 cup whole wheat flour&lt;/li&gt;
&lt;li&gt;1/2 cup brown rice flour &lt;/li&gt;
&lt;li&gt;1/2 cup oat flour (for less of a grainy consistency make the brown rice/oat flour 1/3 in addition to 1/3 unbleached flour)&lt;/li&gt;
&lt;li&gt;5g of dry yeast &lt;/li&gt;
&lt;li&gt;5tsp of ground flaxseed&lt;/li&gt;
&lt;li&gt;1 1/2 cup of soy milk (or until desired consistency)&lt;/li&gt;

&lt;p&gt;Salad is the best for lunch time. Light and refreshing. What better way to get your greens and all the nutrients than chowing down on some raw veggies. People usually don’t like raw veggies, so what I usually do is cut them up really thin so that the dressing would seep right into those veggies. When people imagine a raw food dish, they think of leaves coming out on a plate, straight up. Buuut, we’re not rabbits so, cutting them up super thin and arranging them in a funky way will make eating all the veggies fun. And let’s not forget, it’s not all that bad, actually it’s delicious with some good ol’ home made dressing too. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;&lt;em&gt;Ingredients&lt;/em&gt;&lt;/strong&gt;&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Vegetables&lt;/em&gt; (thinly slice: carrots, cucumber, beets &amp; onions; shred: kale &amp; chard)&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 medium carrots&lt;/li&gt;
&lt;li&gt;0.5 cucumber&lt;/li&gt;
&lt;li&gt;1 beet&lt;/li&gt;
&lt;li&gt;0.5 onion (sliced thin and soaked in water for 10 min, it takes out the harshness of the onion)&lt;/li&gt;
&lt;li&gt;6 medium leaves of dyno kale (lacinato kale)&lt;/li&gt;
&lt;li&gt;2 large leaves of red chard&lt;/li&gt;
&lt;li&gt;20g of nama wakame (raw sea weed, rinse and soak in water)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;em&gt;&lt;br/&gt;&lt;/em&gt;Check out &lt;a href="http://youtu.be/j774vdXk6lQ"&gt;this video&lt;/a&gt; for slicing cucumbers and carrots. (Sorry, it’s in Japanese)&lt;/p&gt;
&lt;p&gt;&lt;a href="http://youtu.be/_xco9QSvlX8"&gt;This video&lt;/a&gt; for kale. (very similar to a cabbage, roll up the leaves and shred away)&lt;/p&gt;
&lt;p&gt;&lt;em&gt;toppings&lt;/em&gt;:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;black sesame seed&lt;/li&gt;
&lt;li&gt;middle eastern sesame seed (it tastes different from the East Asian type, tastes like tahina)&lt;/li&gt;
&lt;li&gt;sunflower seeds&lt;/li&gt;
&lt;li&gt;2 small dyno kale leaves baked (lightly coat the outside with olive oil + sprinkle some pink himalaya salt, and bake in the oven/oven toaster @ 350 or so for 2 min, or until crispy)[ok… it’s not completely raw, but it’s just a topping…]&lt;/li&gt;
&lt;li&gt;top it with some grated ginger for some zing to your dish.&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;em&gt;dressing&lt;/em&gt; (for 1 - 2 servings or to your taste):&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;2 tbsp extra virgin Lebanese olive oil&lt;/li&gt;
&lt;li&gt;1 tbsp hemp oil&lt;/li&gt;
&lt;li&gt;1 tbsp apple cider vinegar (raw, unfiltered)&lt;/li&gt;
&lt;li&gt;1/4 tsp of paprika&lt;/li&gt;
&lt;li&gt;little sprinkle of black pepper&lt;/li&gt;
&lt;li&gt;squeeze some lemon to taste, I put about a 1/4 to a half of a lemon in there.&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;I think all this (vegetables) will yield about 4 servings. You’ll probably need to make another dish on the side as this won’t be enough to fill you up. &lt;p&gt;After taking a rather long afternoon nap, we peeked into a fridge that was almost empty. It was rainy and cold so we decided to make a nabe, but all on the stove instead of the hot pot since the baby might be tempted to pull our dinner to the floor. &lt;/p&gt;
&lt;p&gt;&lt;em&gt;&lt;br/&gt;&lt;/em&gt;Quick Recipe&lt;/p&gt;
&lt;p&gt;Similar to the udon you’ll need to start with the broth&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Soup stock&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;1 big sheet of kombu (kelp)&lt;/li&gt;
&lt;li&gt;2 shiitake mushrooms &lt;/li&gt;
&lt;li&gt;1L - 1.5L of water (depends on how big your pot is and how many you want to serve) &lt;/li&gt;
&lt;li&gt;3 tbsp of sake&lt;/li&gt;
&lt;li&gt;2 tbsp of soy sauce &lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;&lt;em&gt;Ingredients&lt;/em&gt;:&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;carrots &lt;/li&gt;
&lt;li&gt;onions (green onions would have been nice…)  &lt;/li&gt;
&lt;li&gt;chinese cabbage&lt;/li&gt;
&lt;li&gt;chives&lt;/li&gt;
&lt;li&gt;some more mushrooms&lt;/li&gt;
&lt;li&gt;enoki mushrooms, daikon&lt;/li&gt;
&lt;li&gt;shirataki (I don’t know the name of this ingredient in English…)&lt;/li&gt;
&lt;li&gt;silken tofu (medium and firm works well, the baby likes the soft ones)&lt;/li&gt;
&lt;li&gt;some fish (we used New Zealand Hoki, it’s really good with less oily fish)&lt;/li&gt;
&lt;/ul&gt;&lt;p&gt;*Other tips for ingredients: You can usually do nabe with all kinds of seafood and also meat. We opted to do small bits of fish in observance of lent. Once we break our fast we’ll probably do a chicken-soy milk nabe, if the weather still stays cool.&lt;/p&gt;
&lt;p&gt;&lt;em&gt;Flavoring the individual soup&lt;/em&gt;&lt;/p&gt;
&lt;ul&gt;&lt;li&gt;kimchi&lt;/li&gt;
&lt;li&gt;grated taro ( I think that’s what it’s called, we call it &lt;em&gt;nagaimo)&lt;/em&gt;&lt;/li&gt;
&lt;li&gt;black sesame - miso sauce (30g or so of black sesame ground, 1tbsp of miso paste, 2 tsp of soy sauce, 1 tbsp of sake)&lt;/li&gt;

It could have been plain, made with some powdered dashi, but my husband decided to make some shiitake-kombu dashi from scratch, which makes this dish a vegan dish. Yeah, that’s how it goes around here. Heck, I would have been ok with a cheese quesadilla but Mr. matsumoto had to take the midnight snack to another level. &lt;/p&gt;
&lt;p&gt;&lt;strong&gt;Nutrition notes:&lt;/strong&gt;&lt;br/&gt;seaweed/kelp is known to: &lt;/p&gt;
&lt;ul&gt;&lt;li&gt;prevents ulcers&lt;/li&gt;
&lt;li&gt;treats some types of cancer&lt;/li&gt;
&lt;li&gt;lowers cholesterol&lt;/li&gt;
&lt;li&gt;increases weight loss&lt;/li&gt;

&lt;li&gt;2 teaspoons grated ginger &lt;/li&gt;

&lt;ul&gt;&lt;li&gt;Soy sauce to taste (about 25ml for 500ml of water)&lt;/li&gt;
&lt;li&gt;The following seaweeds: nama Wakame &amp; dried Japanese wakame &amp; Korean seaweed. &lt;/li&gt;
&lt;li&gt;Topped with green onions &amp; served with brown rice whole grain mochi. &lt;/li&gt;
